We were wrongly made afraid of butter. It is not responsible for cardiovascular disease (CVD) and actually protects against disease. The idea that saturated fat and LDL cholesterol cause cardiovascular disease comes from anti-fat and anti-cholesterol propaganda, which all started with one man: Ancel Keys. At least, that is what Lars van den Nieuwenhoff believes. And he is not the only one. For several decades now, a campaign has been run against the work of Keys.
